古城梅是日本最著名的青梅品种之一,主要产于和歌山县。古城梅酒是以稀有且珍貴的「古城梅」品種釀製的日本梅酒。因其梅身青綠有光澤,被譽為「綠寶石」或「藍色鑽石」。此品種香氣優雅、 酸度清爽並帶有獨特微澀感,風味層次豐富。

古城梅酒的特色

品種稀少: 產量不到日本梅子總產量的10%
風味獨特: 與常見的南高梅不同,古城梅酒酸度較為清新,並帶有高雅的尾韻與微微的澀味,不會過於甜膩。

品种特点

外形与肉质: 果实呈鲜艳的翠绿色,表面光滑漂亮。与著名的“南高梅”相比,古城梅的果肉更紧实、更硬,皮不易破损。
用途: 由于果肉硬实,在浸泡过程中不易煮烂,非常适合用来制作梅酒和梅子糖浆(梅シロップ)。用它泡出的梅酒色泽清澈,口感爽口清香。它也是制作梅汁(梅エキス)的优质原料。
季节: 成熟期较早,通常在每年的5月下旬至6月。

市场现状

由于栽培难度较高以及主打品种“南高梅”的普及,古城梅的产量逐年减少。它在市场上属于非常珍贵的稀有品种,深受梅酒爱好者的追捧。

"Gojiro-ume" (Gojiro Plum)

One of Japan's most highly regarded ume varieties, Gojiro-Ume is primarily cultivated in Wakayama Prefecture, the heartland of premium Japanese plums. Renowned for its exceptional appearance and quality, it is often referred to as the “Blue Diamond” of Japanese ume.

Unique Characteristics:

• Large, attractive fruits with a vibrant emerald-green skin.
• Thick, juicy flesh with a well-balanced flavour profile.
• Produces a crystal-clear ume liqueur with a refreshing aroma and clean finish.
• Comparable to the famous Nanko-Ume, but prized for its thicker flesh and excellent processing quality.
• Harvest season typically runs from late May to June.

Rarity & Market Value:

Gojiro-Ume remains a highly sought-after specialty variety. Despite growing demand, its production accounts for less than 10% of Japan's total ume harvest, making it considerably rarer than mainstream varieties.

Favoured by ume liqueur enthusiasts and connoisseurs, Gojiro-Ume is celebrated for its superior fruit quality, limited availability, and outstanding flavour.
